Making dumplings is one of the common activities for students who study abroad.
I did it many times with friends and missionaries when I was in the US.
Usually I made the fillings myself and bought the wrappers from a Chinese grocery store.
Now I have a pasta machine and I can make the wrappers myself.
The dough for dumpling wrappers is same as for noodles.
Simply mix all purpose flour wth 40% water and a pinch of salt.
Use the pasta machine to roll out the dough.
There are 4 settings on my pasta machine, ranging from 4 to 1.
Setting 4 is the thickest and setting 1 the thinnest.
Setting 1 is for making wontons and setting 2 can get the thickness nicely for making dumplings.
Roll out the dough several times to get the sheet of dough.
With a dumpling maker or a cookie cutter, cut out round and uniform circles to be used as wrappers.
Place a wrapper in the dumpling maker and add some fillings.
Use a finger to dip some water and run it around the edge of the wrapper.
Fold the dumpling maker and press firmly to seal the dumpling tightly.
Then a dumpling is perfectly made.

I added some pureed vegetable in a dough and some pureed pumpkin in another.
They colored the dumplings.
There are several ways to cook dumplings.
Put them in boiling water is the most common way.
